Pan Roasted Brussels Sprouts with Bacon
4-6 strips of thick-cut Bacon
1- 2 tablespoons Olive Oil
1 1/2 pounds of Brussels Sprouts, trimmed and halved
1 small Onion, diced
2 medium Garlic cloves, chopped
Salt & Pepper, to taste
1. Cut bacon into 1/2-inch pieces and cook in a large skillet over medium-high heat until half-way cooked. Place bacon on a paper towel & set aside.
2. In the same pan, add olive oil, diced onions and prepared Brussels Sprouts. Cook for 8-10 minutes over medium-high heat, stirring occasionally, until golden brown.
3. Add garlic and bacon. Reduce heat to medium-low and cook for another 10 minutes, or until the Brussels Sprouts begin to caramelize.
4. Add salt & pepper to taste. Serve immediately.
